Sweet & Sour Meatballs

This is a family recipe from my wife’s aunt. If you want a quick and easy meal, this is a great bet. In our family, we serve this over rice.

Ingredients

½ cup packed brown sugar
1 tablespoon cornstarch
⅓ cup vinegar
1 tablespoon soy sauce
1 can (20 ounce) pineapple chunks
1 package (20 ounce) frozen meatballs, thawed

Directions

Combine the brown sugar and cornstarch.

Add the vinegar, soy sauce, and pineapple chunks (including the juice). Mix until the brown sugar and cornstarch are completely dissolved.

Microwave Preparation

Microwave the sauce in a 2 quart microwave save dish on high for approximately 10 minutes or until thickened, stirring every 3-4 minutes. (If your microwave does not have a turntable, rotate a quarter turn when you stir.)

Add the meatballs and stir to thoroughly coat the meatballs in sauce.

Microwave on high for another 10 minutes, or until meatballs are hot.

Stove-Top Preparation

Cook the sauce in a 2 quart pan on medium-high heat until thickened, stirring occasionally.

Add the meatballs and stir to thoroughly coat the meatballs in sauce.

Continue to heat on medium-high heat until the meatballs are hot.

Slow Cooker Preparation

Mix the sauce and meatballs in your slow cooker to thoroughly coat the meatballs.Slow cook on high for 4-6 hours, until sauce is thick and meatballs are tender.
